Sweet & Savory Citrus Chicken Whole30 & Paleo

 Hello there, to anyone who loves Chinese take out but hates the way it makes you feel! Because, same.

This citrus chicken is somehow both sweet & savory, filled with delicious spices, incredible textures and super fresh ingredients.

While most of what I do is usually very low prep/fuss I will warn that this is a tad more involved but SO WORTH IT.

If you're not super huge on recreating take out chicken texture and don't mind the sauce being a little more runny, you can just ignore the arrow root starch and that will cut some ingredients & steps out (but it really does make this super delicious).


 Ingredients:
Instructions:
  1.  Place a large sheet pan in oven and preheat to 425F (the starch can get sticky, unlined might work better - I still line mine and am just careful/patient taking them off) 
  2. For chicken mix pink salt, pepper, baking soda & arrow root starch - then lightly coat diced chicken in mixture. This works best in batches.
  3. When oven is preheated, remove pan from oven, spray with or coat lightly with avocado oil and carefully place the chicken pieces on the pan in an even layer and return to oven for 10min
  4. While the chicken bakes prepare pan by adding 1/2-1tsp lightly dried ginger, red pepper flakes, and 4 minced garlic cloves to a dry cool pan leave for now. Mix the rest of the sauce ingredients in a separate bowl and set aside.
  5. When chicken has been in oven for 10 min remove, flip with tongs, bake another 10min. 
  6. 5 min before chicken is done, heat up ingredients in pan until fragrant (only a few seconds), stir & add sauce to heated pan - the arrow root will allow the sauce to thicken. 
  7. Carefully add chicken to pan and toss to coat!
  8. When ready to serve, add oranges, green onions and serve over cauli rice and a side of bok choy!
