Paleo Chicken & Waffles Tenders W/ Garlic Rosemary Cauli Mash

Fried Chicken + waffles = classic (but not healthy)

Chicken Tenders + mashed potatoes = classic (but not healthy)

Chicken tenders made with paleo pancake/waffle mx + garlic rosemary cauliflower mash = super delicious  & pretty darn healthy!

And the best part... this is almost too easy.

If I had thought this through a little further I probably would have prepared some green beans to add some color and more nutrients, but I think this is a good start, and you are welcome ;)

  1. Preheat oven to 400F, line 2 baking sheets (spray with avocado oil), and prep chicken by cutting into tenders sized to your liking. 
  2. Prepare the egg wash and pancake mix breading stations using two bowls. In one bowl mix 2 eggs with a splash of almond milk whisked together. In the other just dry pancake mix. 
  3. Use a fork or tongs to coat both sides of the chicken strip in the egg wash (let excess drip off), then toss in the pancake mix, shake off excess, place on lined baking sheet lightly spray with avocado oil. 
  4. Bake for 12-16 min depending on tender thickness - flip halfway through. 
  5. While the tenders are baking steam cauliflower florets until very very tender. Add to food processor with garlic, rosemary and set to puree until smooth. 
  6. Serve chicken tenders with grade A maple syrup and enjoy!
