Sardine & Avocado Salad/Dip Whole30 & Paleo

I know I know... sardines... what the heck? I have been trying to figure out how to get more inflammation fighting, nutrient dense foods in my diet lately.

Our body absorbs and utilizes micro nutrients from natural food sources so much more efficiently than from supplements.

Sardines are truly a power house when it comes to omega-3s ... with 1800mg per serving vs my expensive fish oil that only delivers 1280mg per 2 capsules.

These sardines are not like you're imagining (you also might be imagining anchovies which taste pretty different). They actually do not have a fishy taste or smell like a can of tuna, its a pretty mild white fish flavor that seasons up really well. This recipe is for those who cant "see what they are eating".

Paleo Chicken & Waffles Tenders W/ Garlic Rosemary Cauli Mash

Fried Chicken + waffles = classic (but not healthy)

Chicken Tenders + mashed potatoes = classic (but not healthy)

Chicken tenders made with paleo pancake/waffle mx + garlic rosemary cauliflower mash = super delicious  & pretty darn healthy!

And the best part... this is almost too easy.

If I had thought this through a little further I probably would have prepared some green beans to add some color and more nutrients, but I think this is a good start, and you are welcome ;)
 Ingredients:

Sloppy Joe Potato Boats Whole30 & Paleo

Last week a family member posted a boomerang of Hawaiian Sweet Roll Sloppy Joe's pulling apart with a layer of cheesy goodness and I just about fell out of my chair they looked so good.

While this is clearly no Cheesy Hawaiian Sweet Roll Sloppy Joe, it might be the closest thing you can get while staying whole30 & paleo.

We did it 2 ways here - I had it over sweet potato (simulating the sweet roll) and the boyfriend had it over a baked potato. Both ways were AMAZING (you know for a healthy version).

The Sloppy Joe mix is sweetened with dates and I used ground turkey because I have an intolerance to red meat, but I am sure ground beef would be just fine!

Soft or Crispy Mini Pepper Taco's Paleo & Whole30

Soft or crispy? Which would you choose? These little peppers pack such a punch of flavor, they compliment the "taco meat" mixture soooo nicely.

I honestly can't decide if I like the crisp crunch of the fresh pepper taco or the delicate soft texture and robustness that the baked soft taco has. The good new with these is that you don't have to!

You may end up with extra filling depending on how many you make - which I think is a bonus. I am highly considering making taco stuffed peppers with some big bell peppers too. Topped with red onion, black olives, salsa and chunky guac?! What more could you want!!!
