Lemon Blueberry Cardamom Paleo Pancakes
Some ingredients were just made for each other, this is clear when you add lemon, blueberry and cardamom to anything. So get your zesters ready because you are going to be hooked on adding lemon zest to everything (if you're not already hooked from my lemon blueberry cardamom paleo granola, or lemon blueberry cardamom chia pudding).
Lemon zest is such a powerful flavor to bring into any recipe but it really brightens up and plays nicely with the blueberries, while the cardamom brings out the warmth in both ingredients like stepping into the sun on a warm spring afternoon! Sweet, bright and warm!

Ingredients:
- Birch Benders Paleo Pancake mix
- Zest of 1 med lemon
- Juice of 1/2 med lemon
- Fresh blueberries (for pancakes)
- 1/2 tsp Cardamom
- Fresh or frozen blueberries (for compote)
Steps:
- Follow packaged instructions for larger batch of pancakes
- Add lemon zest, lemon juice, and cardamom and mix to combine.
- For each pancake add desired amount to pan and drop 4-5 fresh blueberries in.
- For compote add 1/2 - 1 whole bag of wild blueberries to small pot, and simmer until thick blueberry compote forms.
