Shortcut Shrimp Fried Cauliflower Rice Whole30 & Paleo

 I had planned on making a different shrimp fried cauli rice recipe this week, but I just really wanted to order take out so I could spend more time with our new adopted kitty (her name is Cotton! See adorable picture below).

Thank goodness for Cotton because this simplified shrimp fried cauli rice is going to become a staple in our home when we need something quick, filling & nutritious but are tired of chicken & veggies!

Rather than dicing carrots, cutting up a head of broccoli, fussing with the food processor to rice up some cauli and saute up some big shrimp - I turned to my freezer and got a little creative.

Basically every ingredient is from my freezer, if we didn't already have the red onion diced in the fridge I would have used frozen diced white onions.

  • Chosen foods avocado oil spray
  • 1 bag Cali style veggies
  • 1 bag Cauliflower rice
  • 2 cups Salad Shrimp
  • 1/4-1/2 diced red onion
  • 1 Tsp minced garlic
  • 1/4 Tsp ginger powder
  • 2-3 Tbsp Coconut aminos
  • Avocado oil spray
  • 2 eggs
  • 1/2 cup Green onions (mix in & garnish)
  • Salt & pepper
  • Red pepper flakes (optional for spice & garnish) 

  1. Add frozen bag of California veggies to large sauté pan & start to defrost.
  2. Microwave bag of cauliflower to directions to defrost.
  3. Defrost shrimp if frozen, strain & set aside. I use the cold water method (follow package directions).
  4. When veggies are 1/2 defrosted add red onions & sauté until onions are translucent and veggies are heated.
  5. Add garlic to veggies & onions & sauté 2 min then push to one side of pan.
  6. Turn heat down to what you would for making eggs. Whisk 2 eggs in a small bowl, then pour on side of pan without veggies and let start to set before scrambling (2-3 min)
  7. Once scrambled & mostly set combine with the rest of the pan.
  8. Add well strained shrimp to pan (you don’t want soggy rice) toss to combine and sauté off any extra moisture. Be careful not to over cook shrimp!
  9. Add cauliflower rice, coconut aminos, salt, pepper, ginger, green onions & mix to combine!
  10. Serve up in a bowl family style topped with some red pepper flakes & extra green onions if you like a little kick!
