Palmini Asian Stir-Fry Whole30 & Paleo

Palmini has become an instant staple in our kitchen for so many reason!

First of all it's delicious, and we already loved hearts of palm as an ingredient in salads and stir fries.

Second, it's a 1 ingredient whole food noodle substitute... and what's not to love about that? Third, it has one gram of protein and one gram of fiber. It has no fat and is a good source of potassium, copper, Vitamin B6, and zinc.

This stir-fry is full of delicious veggies, tons of flavor and lots of protein and fiber to keep you full! These noodles hold up well enough so that you could make this ahead of time as a meal prep!

Ingredients:


  • 1 bag of fresh or frozen stir fry veggies of your choice
  • Protein of your choice (I used chicken sausage, but feel free to use sliced chicken breast or whatever suits your lifestyle)
  • 1 can Palmini
  • Coconut Aminos
  • Avocado Oil Spray (or olive oil)
  • Green onion (optional)
  • Red Onion (optional)
  • Garlic Powder
  • Ginger Powder
  • Salt
  • Pepper


Steps:
  1. Marinate your protein of choice in coconut aminos, a sprinkle of ginger, garlic, salt and pepper for about 15 min. This is not necessary but will add a pop of flavor if using chicken!
  2. In one pan spray with oil and cook the protein to directions.
  3. In another pan spray with oil and cook the veggies! If frozen let defrost a bit before adding seasoning. 
  4. To the veggie pan add a few good glugs of coconut aminos, sprinkle with garlic powder, ginger powder, salt and pepper to taste and cook until the veggies start to become tender. 
  5. Open can of palmini, drain and rinse.
  6. To whichever pan is bigger combine cooked protein, veggies & palmini. Toss and stir until all the veggies, protein and palmini are coated with coconut aminos and spices. 
  7. Top with diced red onion, and sliced green onions to garnish. Serve and enjoy!
