"Millennial" Massaged Kale Taco Salad Whole30 & Paleo

 Sooo as the name suggests, this is almost the most millennial taco salad (almost bc I forgot to include hemp hearts, darn it!).  My dad says I eat like a millennial - and when asked what he means, he explains "all you eat is kale and quinoa!"... Daaaaadddd... I don't eat quinoa! I eat zoodles, cauliflower rice, sweet potato toast and drink fermented tea. Okay?!

Anyway, the bed of this taco salad is massaged kale... so yeah it is probably the most "millennial" taco salad ever... but DO NOT KNOCK IT TILL YOU TRY IT.

When I first saw and instagram post about massaged kale I literally thought it was the start of a joke... about millennials... but it wasn't... I didn't think much more about it until I saw a few more people doing it and thought that it couldn't hurt to give it a try! IT MAKES RAW KALE SO TENDER AND YUMMY! Even just with salt and pepper!

This recipe is also a form of a "Macro Bowl" you can adjust the ingredients to the macronutrients your body needs or is craving (see image below with more avocado for more fat & less tomatoes and peppers for less carbs).

He name is Cotton and we are so thrilled to share our home with this sweet girl and in turn give the adoption group room to bring in another at risk kitty from a high kill shelter. I havent decided if this is going to be a regular thing but I have included another picture of her below - feel free to leave a comment about how you feel about including animal pictures in the blog :)

Ingredient (suggestions):
  • Dino Kale (any variety works)
  • Chosen Foods Avocado Oil Spray (olive oil works too)
  • Taco meat of your choice (seasoned with my fajita marinade)
  • Cherub tomotos
  • Bell peppers (diced)
  • Avocado
  • Green Onion
  • Red Onion
  • Olives
  • Salsa or other dressing of your choice. 

Instructions:
  1. Prepare kale by cutting or ripping away from stem, and chop or cut into desired sized pieces (or just buy a bag of pre prepped kale).
  2. Add desired amount of kale to bowl or your choice & spray or drizzle with avocado or olive oil.
  3. With clean hands scrunch and work the kale until you feel less resistance and a more tender texture. Season with salt and pepper if you like.
  4. Arrange remaining ingredients and enjoy!
