Lemon Turmeric Chicken Soup Whole30 and Paleo

I am not sure how to describe this soup other than a perfect transition soup from winter into spring! The freshness of the lemon, with the warmth of the chicken, turmeric and parsley are just too good!

This soup was so quick and easy! It used mostly prepped ingredients (you could go a step further and even but the mirepoix pre chopped!). The idea for this recipe stemmed from seeing one of Unabound Wellness recipes on a whole30 recipes page! Hers has a few more ingredients like egg yolks and a few more steps - feel free to check hers out too!






Ingredients
  • Rotisserie chicken (12-14oz)
  • 1/2 red onion (diced)
  • 1/2 white onion (diced)
  • Minced garlic (1.5 tsp)
  • 3-4 celery stocks (chopped)
  • 1 cup carrot chips
  • 2 cups cauliflower rice
  • 6 cups chicken broth (1.5 boxes)
  • 1/2 cup lemon juice
  • 2 tbsp fresh parsley
  • 2 tsp turmeric
  • 1 tsp dill
  • 1 tsp salt
  • 1 tsp pepper
    Steps:
    1. In large stock pot sauté onions and garlic until translucent.
    2. Add celery, carrots and cauliflower rice. Cook until they start to become tender (about 5min).
    3. Add the rest of the ingredients, bring to a boil then let simmer for about 10-15min then serve with a lemon wedge or parsley.
