ACV Marinated Chicken and Purple Cabbage Whole30 & Paleo

This is one of those meals that makes you feel like you really have it together. Dare I say, it makes you feel like a grown up. A grown up who can cook a delicious well balanced and beautiful meal!

Not only does it have all the major macronutrients, just look at the colors... and holy crap the flavors are out of this world.

I want to throw a dinner party just so I can serve this up and and prove to any healthy eating nay sayers that lean proteins, healthy fats and veggies can be THIS good.

The best part? IT IS SO EASY!!! It could easily be prepared ahead of time for meal prep too!


Apple Cider Vinaigrette/Marinade ingredients (enough for 3-4 chicken breasts):
  • 2tbsp coconut aminos
  • 1tbsp braggs apple cider vinegar
  • 1tsp ginger powder
  • 1tsp dried basil
  • 1tsp black pepper
  • 1tsp garlic powder
  • 1/2 tsp salt
  • 1/4 cup avocado oil
Ingredients for the rest of the meal:
  • 3-4 Chicken breasts
  • 1 whole cabbage 
  • 1 sweet potato per 2 people
  • 1 pint cherry tomatoes per 2 people
  • Avocado oil spray
  • garlic
  • basil
  • salt
  • pepper


Marinaded Chicken Steps (min of 3 hours ahead): 
  • Mix all the vinaigrette ingredients in a ziplock back large enough for your chicken, smoosh it around with your hand to mix. Add chicken to the bag, and again smoosh some more (isnt that fun?!)
  • Leave in fridge for min of 3 hours.
Steps for the rest of the meal (read ahead for an easy plan):
  • Pre heat oven to 425
  • I have baking times listed below next to each veggie- I put all the veggies into the oven at the same time, set my different timers and then started on the chicken!
  • Prep baking sheets with foil or parchment paper and prep veggies as follows:
    • Cabbage - 10min flip 10 min
      • Cut into 8 equal wedges
      • Spray or drizzle heavily with avocado oil, sprinkle with salt, pepper & garlic powder
    • Sweet Potatoes - 20 min
      • Cut into large steak fries
      • Spray with avocado oil, sprinkle with salt, pepper & garlic powder
    • Cherry tomatoes - 15-20 min 
      • Leave whole
      • Spray with avocado oil, sprinkle with salt, pepper, garlic powder & dried basil
  • Add chicken to pan with cover on medium to medium high (set aside extra marinade to be added back). 
  • Do not touch for 4 min, flip and cook 2 min. Set heat to low, add extra marinade back to pan, cover and simmer for 10min.
  • Remove from heat and let sit with the lid on for another 10 min to absorb juices and be all fancy.
  • After the chicken has rested slice & place over a bed of spring mix, and arrange veggies and garnish with hemp seeds!
