Sweet Potato Toast Whole30 & Paleo

Sweet Potato “Toast” is my new favorite quick fix for the "I don't know what I am in the mood for".

Sweet potato toast is SO easy and super fun to customize, for any meal of the day! Can't decide what you want, make a few different kinds!

Both of the options shown here are Paleo & whole30 compliant, but you could customize yours any way you like!


Avocado egg:
The savory option is topped with avocado mash, red onion, cilantro, hard boiled eggs and sprinkled with Trader Joes everything but the bagel seasoning!

Chili lime shrimp:
Topped with avocado mash, shrimp tossed in lime juice, salt, chili powder, and cayenne, red onion & red pepper flakes!

Chocolate, almond butter, blueberry:
The sweet option is topped with pure almond butter, ghirardelli 100% cacao, blueberries, and sprinkled with hemp hearts!
Which would you choose...🥑🍳savory or 🍫sweet?!

Steps:
1. Preheat oven to 400F
2. Slice sweet potato into 1/2” thick “toasts”.
3. Arrange in single layer on baking sheet.
4. Bake for ~15 min or until the “toast” can be pierced with a fork, but not cooked all the way through or mushy.
5. Top with whatever your heart desires 🍳🥑🥦🥥🍫🍓
