Sweet Potato Bell Pepper “Nachos” Whole30 & Paleo

Oh baby this dish was as fun to make as it was to eat!

I was worried this would turn out to be complicated but it was SO easy and SO perfect if you have different appetites in your house because everyone can build their own! Depending on how many are chowing down these will also leave you with some wonderful left overs! The timing of the foods line up really well and takes about 30 min start to finish (if you're really good at multitasking in the kitchen).
“Nachos”:
  • 1lb ground turkey 
  • 3 bell peppers (quartered) 
  • 1 sweet potato (sliced thinly) 
  • 1/2 onion (diced) 
  • 2 Tbsp tomato paste 
  • Garlic powder 
  • Chili powder 
  • Salt, pepper 
  • Chosen Foods Avocado oil Spray




Toppings:
  • Salsa 
  • Cilantro 
  • Red onion 
  • Green onions 
  • Sliced black olives 
  • Guac (buy your own or make it!)
  • Anything else your heart desires!

Steps:
  1. Pre heat oven to 400F 
  2. Add onion to pan large enough to brown ground turkey, and sauté until starting to caramelize. 
  3. Add turkey, season with salt, pepper, chili powder & garlic. 
  4. Add tomato paste to browned meat, distribute and taste- season to taste. 
  5. Add sweet potatoes to one baking sheet, spray with avocado oil & season with salt and pepper. 
  6. Sweet potatoes cook for 20min, flipping half way through. 
  7. Add bell peppers to baking another baking sheet, spray, season with salt & pepper. Add to oven halfway through sweet potato cooking. Remove after 10min. 
  8. After vegetables have cooled plate up, top with ground turkey and go to town with your toppings & enjoy
