Fajita Stuffed Sweet Poatoes Whole30 & Paleo

Clearly I have a love affair with bell peppers, onion, avocados and sweet potatoes. I also have a love affair with costco, which is how I ended up with so many.  This sweet and spicy dish is sure to be a hit, and is SOOO simple to whip up. The base of this recipe is my 1 pan fajita veggies & marinated chicken. It's a fun dish that allows everyone to fix up their own dish as they please! For instance my dad hates sweet potatoes and cilantro (idk how we are related) so his modification is to use a regular potato and omit cilantro as the topping! I hope you enjoy this as much as we all do!

Ingredients:
  • 3-4 chicken breast (cut into strips)
  • 1/2 cup coconut aminos
  • 1.5-2 Tbsp lime juice (or about 2 small fresh limes)
  • 1 Tbsp cumin
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp cayenne pepper (omit & use more chili powder if you don’t like cayenne)
  • 1 Tbsp black pepper
  • garlic powder (for veggies)
  • As many of the following veggies as your heart desires
  • Multi colored bell peppers
  • Red & or white onions
  • Sliced baby bella mushrooms
  • Toppings:
  • salsa
  • cilantro
  • green onions 
  • diced red onion
  • sliced black olives
  • Guac (make it or buy it)


Steps:
  1. Preheat oven to 400F
  2. Mix aminos, lime juice, and spices together. Place sliced raw chicken in marinade for 1 hour min (the longer it sits the getter it gets😘)
  3. Slice fajita veggies & Arrange veggies on baking sheet(s) 
  4. Spray with avocado oil spray
  5. Sprinkle with salt, pepper, garlic and toss to coat
  6. Add chicken to the veggies on the sheet pan & bake for about 15 min (you may need more or less time depending on your oven)
  7. Microwave sweet potato in potato pocket & follow directions (or poke holes & wrap in wet paper towel and microwave for ~4min depending on size)
  8. Let potato cool slightly, cut down the middle but not all the way through. Push ends towards the center so the potato opens up.
  9. While chicken & veggies are baking prepare the toppings of you choice.
  10. Stuff the potato with fajita chicken & veggies. Top with cilantro, red onion, guac or your other favorites & enjoy!
