Whole30 & Paleo Avocado Baked Eggs! (w/ garlic asparagus and sweet potato hash)

 Talk about a match made in heaven! These ingredients were made to go together. The cooking time of all ingredients line up perfectly.

To be honest I have wanted to try avocado baked eggs but was always a little intimidated by the idea- but DO NOT WAIT... this is SO easy, SO fast, and SOOOO delicious.

Pro tips:
- when you cut your avocados (before you crack eggs) try out different baking dishes that will provide stability during the egg transfer and transfer to the oven... OR use some tin foil to create your own custom avocado stands.
- When scooping out the avocado to make room for the egg, it's better to scoop a wide shallow hole rather than a deep one - this will allow for more even cooking of the eggs.


  • 2 avocados
  • 4 eggs
  • 1 bunch of asparagus
  • 1 sweet potato
  • Avocado oil (spray)
  • Everything but the Bagel Seasoning
  • Salt
  • Pepper
  • Greens to serve over (optional)

  1. Preheat oven to 425f
  2. Dice sweet potato for hash, place in skillet, spray with avocado oil, sprinkle with salt pepper, garlic granules and start to sauté.
  3. Trim asparagus, lay out out on baking sheet. Spray with avocado oil, sprinkle with salt, pepper and garlic granules.
  4. Cut avocados in half (Be sure to have muffin tins or make a foil stand to keep your avocados halves upright during baking.)
  5. Scoop out about 1.5 tbsp from the middle to allow for the egg to distribute.
  6. Crack 1 egg at a time into a small bowl keeping the yolk in tact. Spoon or pour eggs into hallowed avocado 1/2s
  7. Put both asparagus & avocado eggs in the oven for 15-20min (don’t be fooled, the tops of the eggs look cooked but the middle will still be runny).
  8. Remove both from oven & sprinkle avocado eggs with everything but the bagel seasoning.
  9. Carefully plate avocado eggs with a side of asparagus and sweet potato hash.
