Whole30 & Paleo Spicy Turmeric Chicken Soup
This is my go to base soup recipe. It is so quick to come together, is filling and easy to modify based on your preferences. The Trader Joes Fire Roasted Tomatoes with Green Chilis adds the perfect spicy kick that almost resembles a 'tortilla soup' flavor. The turmeric gives this soup a lovely golden color and some wonderful anti inflammatory properties!
I love to change this recipe depending on what veggies I have in my fridge that need to be used up too! As you can see in the pictures I added a tomato that was looking like it was on its last leg. Try adding kale, cabbage, riced cauliflower, zucchini, or even diced sweet potatoes to change the flavor profile.

Ingredients:
Steps:
1. Prepare chicken to your liking & shred or chop
2. Dice all veggies.
3. Sauté onions until they start to turn translucent
4. Add celery, and carrots, sauté until they start to soften.
5. Add garlic, tomatoes, canned tomatoes, chicken, salt, pepper, turmeric, and heat through to allow flavors to combine.
6. Add chicken broth, bring to a boil, then let simmer for 20-30min.
7. Serve with avocado or cilantro

- 1.5lbs organic free range chicken breast cooked
- 32oz box of compliant chicken broth
- 1 can Trader Joe's diced and fire roasted w/ organic green chilis Tomatoes
- 5 medium celery stalks
- 1/2 onion
- 2 carrots (or a few hand fulls of carrot chips)
- minced garlic to taste
- salt, pepper & turmeric to taste
