Whole30 & Paleo Spicy Creamy Sweet Potato Bowl

This fast lunch or dinner option is a perfect post workout meal!!! This spicy number is my go to after my Orange Theory Fitness workout. It features my favorite Primal Kitchen Foods chipotle lime mayo, and some amazing paleo chicken sausage found at Costco !

I love how easy it is to tweak this recipe to fit your lifestyle & goals. Add or subtract the major components to adjust macros for your personal journey! Less carbs? Use a smaller sweet potato. More protein? Add more sausage! Does higher fat keep you full? Sweet! Add more mayo!

  • 1-2 handfuls of spring mix or Arugula 
  • 1/2 medium sweet potato 
  • 1 Compliant Chicken sausage (I found this wonderful Sabatino's paleo organic basil and cracked black pepper chicken sausage at Costco) 
  • 1Tbsp Primal Kitchen Chipotle Lime Mayo (bought from thrive market - but can also be found on amazon) 
  • 4-6 Tbsp compliant salsa (like this Yai's Thai Thai Salsa)

  1. Bake or microwave your sweet potato (I love this microwave potato pouch - follow directions on pouch), when cool enough to handle slice in half and use other half for a 2nd portion or another plate. 
  2. In separate bowl mix salsa and mayo together and set aside. 
  3. Chop or slice chicken sausage then microwave or sauté. 
  4. Time to assemble! 
  5. Place your choice of greens into bowl 
  6. Place sweet potato over greens and score with a knife (or remove from skin if you prefer) 
  7. Add sausage 
  8. Top with creamy salsa 
  9. Enjoy!!!
