Sweet & Savory Citrus Chicken Whole30 & Paleo

Hello there, to anyone who loves Chinese take out but hates the way it makes you feel! Because, same.

This citrus chicken is somehow both sweet & savory, filled with delicious spices, incredible textures and super fresh ingredients.

While most of what I do is usually very low prep/fuss I will warn that this is a tad more involved but SO WORTH IT.

If you're not super huge on recreating take out chicken texture and don't mind the sauce being a little more runny, you can just ignore the arrow root starch and that will cut some ingredients & steps out (but it really does make this super delicious).

Sardine & Avocado Salad/Dip Whole30 & Paleo

I know I know... sardines... what the heck? I have been trying to figure out how to get more inflammation fighting, nutrient dense foods in my diet lately.

Our body absorbs and utilizes micro nutrients from natural food sources so much more efficiently than from supplements.

Sardines are truly a power house when it comes to omega-3s ... with 1800mg per serving vs my expensive fish oil that only delivers 1280mg per 2 capsules.

These sardines are not like you're imagining (you also might be imagining anchovies which taste pretty different). They actually do not have a fishy taste or smell like a can of tuna, its a pretty mild white fish flavor that seasons up really well. This recipe is for those who cant "see what they are eating".

Paleo Chicken & Waffles Tenders W/ Garlic Rosemary Cauli Mash

Fried Chicken + waffles = classic (but not healthy)

Chicken Tenders + mashed potatoes = classic (but not healthy)

Chicken tenders made with paleo pancake/waffle mx + garlic rosemary cauliflower mash = super delicious  & pretty darn healthy!

And the best part... this is almost too easy.

If I had thought this through a little further I probably would have prepared some green beans to add some color and more nutrients, but I think this is a good start, and you are welcome ;)

Sloppy Joe Potato Boats Whole30 & Paleo

Last week a family member posted a boomerang of Hawaiian Sweet Roll Sloppy Joe's pulling apart with a layer of cheesy goodness and I just about fell out of my chair they looked so good.

While this is clearly no Cheesy Hawaiian Sweet Roll Sloppy Joe, it might be the closest thing you can get while staying whole30 & paleo.

We did it 2 ways here - I had it over sweet potato (simulating the sweet roll) and the boyfriend had it over a baked potato. Both ways were AMAZING (you know for a healthy version).

The Sloppy Joe mix is sweetened with dates and I used ground turkey because I have an intolerance to red meat, but I am sure ground beef would be just fine!

Soft or Crispy Mini Pepper Taco's Paleo & Whole30

Soft or crispy? Which would you choose? These little peppers pack such a punch of flavor, they compliment the "taco meat" mixture soooo nicely.

I honestly can't decide if I like the crisp crunch of the fresh pepper taco or the delicate soft texture and robustness that the baked soft taco has. The good new with these is that you don't have to!

You may end up with extra filling depending on how many you make - which I think is a bonus. I am highly considering making taco stuffed peppers with some big bell peppers too. Topped with red onion, black olives, salsa and chunky guac?! What more could you want!!!

Lemon Blueberry Cardamom Paleo Pancakes

Some ingredients were just made for each other, this is clear when you add lemon, blueberry and cardamom to anything. So get your zesters ready because you are going to be hooked on adding lemon zest to everything (if you're not already hooked from my lemon blueberry cardamom paleo granola, or lemon blueberry cardamom chia pudding).

Lemon zest is such a powerful flavor to bring into any recipe but it really brightens up and plays nicely with the blueberries, while the cardamom brings out the warmth in both ingredients like stepping into the sun on a warm spring afternoon! Sweet, bright and warm!

Paleo Lemon Blueberry Granola

This granola has passed both the brutally honest boyfriend (just one of the reasons I love him), and the super honest friends test... plus I also happen to think its pretty tarn tasty!

The bf eats mostly paleo but loves his yogurt & granola - one night he was ranting and raving about this new lemon blueberry granola. I tried it (begrudgingly after looking at the amount of additives, sugar & grains) but had to admit it was one of the most most delicious and unique flavors of granola I had tasted. I was determined to make something just as yummy (and way healthier!). After some research about wet to dry ingredient rations and a few trial runs, this stuff is seriously addicting... so be careful if you have portion control issues.

Best part. It's the easiest thing to make.

Coconut Chili Curry Chicken Whole30 & Paleo

The "chili" part happened completely accidentally! I was making my sheet pan fajitas chicken marinade at the same time because they share so many of the same ingredients and accidentally picked up the chili powder instead of the curry powder.  I decided to see how it turned out and LOVED it! So now these two recipes share even more in common!
This + my fajitas are a great meal prep option - totally different flavors, same base ingredients, amount of prep/cook time. The best part is, you can make the marinades ahead of time and prep your veggies while the chicken & marinade do their thing! I am a huge fan of optimizing ingredients and time, and this recipe (along with the fajitas) really do it!

Sweet Potato Pizza Bites Paleo & Whole30

I mean. Can you even? They are SO freaking cute AND... super freaking yummy. 
Let's address the cheese... yes cheese in any form is not Whole30 -omit if you're in a round. As far as goat cheese & paleo there is a lot of debate on the internet and no clear answer -for me I can have goat cheese and not have the digestive upset that I get with cow dairy. The ingredients in this daiya cheese are pretty paleo so I am okay with this for a fun pizza treat. That works for me, do what works for you!
Now with that out of the way, lets talk about these tiny delicious little cuties!!!! I topped with my favorite pizza toppings, using turkey  CHOMPS as tiny pepperonis, mushrooms, onions, olives & basil. Feel free to get creative with yours!
